Ingredients

3 individual Kinnikinnick Traditional English Muffins (177 g)
2 tbsp olive oil (30 g) 
½ cup pizza sauce (gluten-free) (102 g)
1 mini sweet red pepper - diced (35 g) 
18 pepperoni slices (22 g)
1 cup shredded mozzarella cheese - reserve ½ cup (112 g)
Optional: finish with fresh thyme and oregano

Traditional English Muffin Pepperoni Pizza gluten-free

Directions

  1. Preheat oven to 400°F (204°C).
  2. Place Kinnikinnick Traditional English Muffins (crumb side up) on a baking tray. Drizzle with olive oil.
  3. Toast in preheated oven for 5 - 7 minutes (crumb should be browned and crispy).
  4. Remove from oven and divide pizza sauce between Kinnikinnick Traditional English Muffins. Spread pizza sauce with the back of a spoon.
  5. Divide ½ cup mozzarella into 6 portions. Top each Kinnikinnick Traditional English Muffin half with 1 portion of mozzarella cheese.
  6. Top with pepperoni, diced peppers and finish with reserved mozzarella.
  7. Return to oven until cheese is melted and golden brown (approx. 3 - 5 minutes).
  8. Remove from oven and garnish with optional thyme and oregano. Serve warm. 
    Yields 6 portions
