Ingredients

1 wedge of watermelon - thinly sliced/cut into stars (286 g)

1 pint fresh raspberries (170 g) 

1 pint fresh blueberries (170 g) 

1 pint fresh blackberries (170 g) 

454 g strawberries - stems removed/thinly sliced

⅓ cup miniature marshmallows (gluten-free) (40 g) 

Optional: balsamic reduction


Directions

  1. Cut 1 wedge of watermelon (approx. 1/16 of a watermelon). Cut out 6 - 8 star shapes, using a pairing knife or your favourite cookie cutter. For the remaining watermelon left around star shapes, cut into cubes. Set aside. 
  2. In a medium serving bowl combine assorted berries and cubed pieces of watermelon. Toss together. 
  3. Add cut out star pieces of watermelon to top of salad. 
  4. Sprinkle with miniature marshmallows.
  5. Drizzle with optional balsamic reduction prior to serving. 


Tips & Variations

  • Add your favourite gluten-free dressing prior to serving instead of balsamic reduction. 
  • Remaining watermelon can be cut into your favourite shape and attached to straws or sticks for a table decoration. Place in vases or glasses for an easy grab and go treat.
