Flaky Pie Crust

Ingredients
¾ cup all purpose shortening (155 g)
2 cups Kinnikinnick All Purpose Flour Blend (400 g)
⅓ cup water (80 g)
1 tsp salt (2 g)
1 large egg (56 g)
1 tsp lemon juice (5 g)
Directions
- In a medium bowl mix Kinnikinnick All Purpose Flour Blend with salt.
- Cut shortening into flour with a pastry knife until shortening is completely coated with flour and blend appears stringy.
- In a small bowl whisk together the water, lemon juice and egg.
- Create a well in the middle of flour mixture and pour liquid in.
- Fold flour mixture in with hands. Continue to work mixture until all the flour is worked in and pie dough is able to be formed into a smooth log.
- Divide dough into 5 portions. Chill dough for 30 minutes in the refrigerator.
- Working with one portion of dough at a time, roll out into desired product. Use parchment paper and a small amount of Kinnikinnick All Purpose Flour Blend or sweet rice flour to aid in rolling out pie dough.
- Follow baking directions for your favorite filling recipe.

If using lard instead of shortening, add an additional 2 - 3 tablespoons of Kinnikinnick All Purpose Flour Blend.
