Ingredients  

Dry Cocoa Rub

⅓ cup cocoa powder (40 g)

½ cup light brown sugar (90 g)

1½ tbsp coarse salt (22 g)

3 tbsp ancho chili powder (21 g)

¼ tsp cayenne pepper (1 g)

1 tbsp dried oregano (2 g)

1 tbsp dried mustard (5 g)

1 tsp ground ginger (5 g)

1 tsp black pepper (5 g)

1 tsp cumin (2 g)

1 tbsp garlic powder (10 g)

Coated Chicken

3 chicken breasts - flatten/cut into desired pieces (700 g)

2 tbsp olive oil (30 g)

1 cup Kinnikinnick Panko Crumbs (110 g)

¼ cup prepared Dry Cocoa Rub (50 g)


Directions

Dry Cocoa Rub

  1. Mix all Dry Cocoa Rub ingredients together. Rub can be stored in an air-tight container for up to 1 month.

Coated Chicken

  1. Preheat oven to 400°F (204°C). Line a baking tray with foil.
  2. In a shallow bowl, combine Kinnikinnick Panko Crumbs and ¼ cup dry rub. Set aside.
  3. Pound chicken breast with mallet or rolling pin until chicken is an even thickness.
  4. Cut chicken into desired portion sizes.
  5. Dredge chicken in olive oil and then in the Cocoa Panko mixture.
  6. Place Coated Chicken on lined baking tray.
  7. Bake in preheated oven for 20 - 25 minutes until chicken is cooked (internal temperature of 165°F (74°C). 



Tips & Variations

  • Bake times will vary depending on type and thickness of chicken. Always cook chicken to an internal temperature of 165°F.
