Ingredients

Tomato Sauce

1 can tomato sauce (680 ml)

1 can tomato paste (170 g)

2 tbsp brown sugar (26 g)

1 tbsp vinegar (10 g)

2 tbsp fresh basil - chopped (9 g)

1½ tbsp fresh oregano - stem removed/chopped (7 g)

3 garlic cloves - minced (7 g)

Filling

280 g lasagna noodles (gluten-free)

1 lb ground hamburger (454 g)

4 sausage links - casings removed (gluten-free) (252 g)

¼ cup fresh parsley - chopped (15 g)

½ tsp salt (2 g)

1 tsp pepper (2 g)

½ tsp chili flakes (2 g)

4 vine tomatoes - sliced (444 g)

125 g cottage cheese - drained

2 cups mozzarella (226 g)

2 cups Italian cheese mixture (226 g)



Directions

Sauce

  1. Combine all ingredients for sauce in a bowl. Mix until combined. Set aside

Noodles  

  1. Prepare noodles as per package directions and set aside.

Filling

  1. In a large skillet, cook hamburger and sausage over medium heat for 10 minutes.
  2. Add parsley, salt, pepper, and 1½ cups Tomato Sauce.
  3. Continue to cook until cooked through (approx. 20 minutes).

Assembly

  1. Preheat oven to 350°F (176°C). Lightly spray a 9 x 13 casserole dish.
  2. Place a layer of lasagna noodles on base. Top noodle layer with half the beef mixture.
  3. Layer 2 sliced tomatoes on top of beef mixture. Cover with cottage cheese.
  4. Place a layer of noodles on top of cottage cheese layer.
  5. Top noodle layer with remaining beef mixture, sliced tomatoes, and mixture of Italian cheese.
  6. Top with final layer of lasagna noodles and remaining sauce.
  7. Sprinkle top with mozzarella cheese.
  8. Bake lasagna for 45 minutes to 1 hour until cheese is melted and centre is heated through.


 

Tips & Variations

  • Lasagna freezes well. If baking from frozen state, bake for 2½ to 3 hours at 350°F (176°C) until heated through centre.
  • The mixture of Italian cheese that we used, romano, parmesan, asiago and provolone.
