Banana Bread (Pancake Mix)

Ingredients

1 package Kinnikinnick Pancake and Waffle Mix (454 g)
½ tsp baking soda (3 g)
½ cup butter - softened (125 g)
½ cup granulated sugar (117 g)
2 large eggs (112 g)
1 tbsp vanilla extract (6 g)
2 cups mashed bananas (approx. 6 - 7) (528 g)

Directions

  1. Preheat oven to 350°F (176°C). Lightly spray a loaf pan.
  2. In a medium bowl, cream butter, vanilla and sugar until light and fluffy.
  3. Add eggs one at a time, mixing after each addition.
  4. Fold in mashed bananas.
  5. Slowly add Kinnikinnick Pancake and Waffle Mix and baking soda to creamed mixture. Mix until fully incorporated.
  6. Pour batter into loaf pan.
  7. Bake in preheated oven for 70 - 75 minutes (check for doneness - loaf will spring back when touched lightly on the top).
  8. Remove from oven and let loaf cool slightly prior to inverting pan. Carefully remove pan and let cool completely before serving.

Yields 1 loaf

Tips & Variations

  • For best results, use frozen ripe bananas (thawed).
