Artisan Rolls Grilled Cheese Tomato Soup Bake

Directions

Tomato Soup

1. In a medium pot sauté butter and garlic.
2. Add tomato paste and stir to combine.
3. Add milk and bring to a boil over medium heat stirring continually.
4. Add basil and reduce heat to simmer for 20 minutes.
5. Remove from heat to cool to room temperature.
6. Once soup has cooled, whisk in 2 eggs. Mix until combined. Set aside. 

Grilled Cheese Buns 

1. Preheat oven to broil.
2. Place Kinnikinnick Artisan Dinner Rolls (crumb side up) on a baking tray. Brush crumb side with butter.
3. Broil in preheated oven until crumb is browned and crispy (approx. 2 - 3 minutes).
4. Remove from oven and divide cheddar cheese between bottoms of  Kinnikinnick Artisan Dinner Rolls.
5. Place tops on to make a sandwich.
6. Return to oven and broil top of Grilled Cheese Buns until golden brown and cheese has melted (approx. 2 - 3 minutes). Watch closely as buns will brown quickly.
7. Remove from oven and Set aside. 

Assembly

1. Reduce oven temperature to 350°F (176°C).
2. Lightly grease a casserole dish.
3. Nestle Grilled Cheese Buns in casserole dish.
4. Pour cooled Tomato Soup over top of Grilled Cheese Buns.
5. Top with shredded mozzarella cheese.
6. Bake in preheated oven for 30 minutes.
7. Remove from oven and top with optional basil.
8. Serve warm. 
   Yields 6 portions
